That’s why chef Angelo Sosa and television personality, Angie Martinez created red quinoa con pollo offering that hearty flavor. Sopa de Pollo with Bolitas de Platano

Amanda Torres, author of Paleo Latin American Cuisine recipe book, brings a healthy twist to sopa de gandules con bolitas, a traditional Puerto Rican dish. She replaces the beans with chicken and leaves out the rice to make it gluten-free. The meatballs are made with green plantains and the broth is infused with authentic sofrito, made with cilantro, garlic, red pepper, oregano and onion. This soup is easy to make and is ideal for busy weeknights when you want to pack a lot of nutrients into one dish.

Ingrid Hoffmann is a famous Colombian-American chef and television personality on the Food Network show. Simply Delicious and also hosts his own Spanish-language cooking and lifestyle show, Delicious, on Galavision/Univision. She recently published Latin Comfort Foods Made Healthy, a cookbook that transforms traditional Latin cuisine into nutritious, diabetes-friendly meals. In her cookbook, she shares a recipe for a lighter version of arroz con leche. It contains brown rice, flax seeds, skim milk or nut milk, stevia and cinnamon. This will definitely do the trick to kill those sweet cravings without overloading on sugars.
