Makes 10 servings
Ingredients
15 ounce can black beans (drained and rinsed)
2 whole bananas
1/3 cup unsweetened cocoa (and/or cocoa powder)
1/3 cup agave nectar
1/2 cup dry oatmeal
1/2 cup dairy-free chocolate chips
1/2 cup almond butter (or your favorite nut butter)
1 teaspoon of vanilla extract
1. Preheat oven to 350ºF.
2. Butter an 8 x 8 mold and set aside. (It is recommended to grease the pan with coconut oil spray.)
3. Combine all ingredients except the oats and chocolate chips and blend in a high-speed blender or food processor.
4. Pour into a bowl and mix together the oatmeal and chocolate chips.
5. Pour the batter into the greased pan and bake for 30 minutes or until a toothpick comes out clean when inserted into the center. Let cool before serving.
