Foolproof Beef Wellingtonby chef Geneviève LaMonaca
Ingredients:
- 2 lbs of central cut beef tenderloin (ask your butcher)
- 1-2 T avocado oil for searing
- 8 ounces shallots, chopped
- 1 lb mushrooms, cremini or button, sliced
- 6 tablespoons of butter
- 1 tablespoon of thyme leaves
- 1 tablespoon of chopped parsley
- Salt and Pepper TT
- Pastry dough x 2:
- Bread flour 1 1/2 cup plus 1 T
- Butter 3/4 cup (6 oz) cubed
- Salt 1/2 t
- 1/4 cup iced water
Directions:
- Cut a 2 lb barrel of center cut from a beef tenderloin or ask your butcher.
- Pat dry, season generously with salt and pepper. sear on all sides with a high smoke point fat (avocado oil)
- Tip: Precooking your beef is the secret to avoiding a soggy bottom crust and most of the moisture is removed beforehand. This will also ensure that your filet is cooked perfectly every time.
- Roast in an oven at 150° to an internal temperature of 115. Refrigerate
- TIP: I like to measure my barrel lengthwise, side to side, then circumference using butcher’s twine. This will help me determine what size I need to make my prosciutto bed and pastry sheet.
- Make your mushroom duxelles. Brown half a pound of minced shallots in 6 T of butter then add 1 lb of finely chopped mushrooms and thyme, sauté, deglaze with sherry wine if necessary, cook until the pan is dry, add the chopped parsley, season and set aside.
- Add the flour and butter to a countertop mixer and, using a paddle attachment, mix on the lowest speed until the butter has turned into crumbs and all the flour is incorporated. Pour in your ice water and mix until well combined. Place the dough on the counter and form into a ball, then flatten/wrap with plastic wrap and refrigerate.
